Ingredients
- 12 ounces fresh green beans, ends trimmed, steamed and blanched in ice water, cut into 1-inch pieces
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15.5-ounce) can garbanzo beans, rinsed and drained
- 1/2 small red onion, thinly sliced
- 1/2 English cucumber, chopped
- 1/3 cup fresh parsley, chopped, plus more, to taste, whole leaves, for garnish
- 1/4 cup olive oil
- 1/4 cup white wine vinegar or champagne vinegar
- 2 tablespoons granulated sugar, can substitute honey
- 1 1/2 teaspoons Dijon mustard
- 1/2 teaspoon salt

Directions
Step 1 –In a large bowl, add the green beans, the black beans, the garbanzo beans, the red onion, the cucumber, and 1/3 cup of the chopped parsley.
Step 2 –In a small bowl, whisk the olive oil, the white wine vinegar, the sugar, the Dijon mustard, and the salt together.
Step 3 –Drizzle the dressing over the salad and toss to coat.
Step 4 –Serve the salad garnished with the extra parsley.
