Ingredients

For the pancakes:

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • vegetable or canola oil, to taste

Optional, for serving:

  • sour cream, to taste
  • fresh berries, to taste, of your choice
  • jam, to taste, of your choice

Directions

Step 1 -Line a large platter with paper towels.

Step 2 -In a large bowl, add the flour, the sugar, the baking powder, and the salt and whisk to combine.

Step 3 -Add the eggs and the buttermilk to the flour mixture and stir until the batter is mostly smooth.

Step 4 -In a large skillet over medium to medium-high, add enough of the vegetable oil to just barely cover the bottom of the skillet. Make sure to adjust the heat accordingly and ensure the vegetable oil does not get too hot, as the pancakes will brown too quickly and burn.

Step 5 -Working in batches of about 3-4 pancakes, in the prepared skillet, add about 1 tablespoon of the batter for each pancake to the heated vegetable oil and cook, flipping once, until both sides are golden-brown, about 2 minutes per side.

Step 6 -Transfer the cooked pancakes to the prepared platter and continue the cooking process until all the batter is used. You should end up with approximately 36 pancakes.

Step 7 -Serve with the sour cream, the fresh berries, and the jam.
