Golden Chicken Taquitos

It’s taquito time! Golden Chicken Taquitos bring you crunch, flavor, and fun! These crispy, golden tortillas are stuffed full of juicy chicken, melty cheese, and tangy salsa flavors. They’re very low effort and don’t take much time at all, so you can enjoy taquito time any time, in no time! These Golden Chicken Taquitos are sure to be the life of all of your parties! Ingredients

For the taquitos:

  • vegetable or canola oil, to taste, for frying
  • 3 cups chicken, cooked, shredded
  • 6 ounces cream cheese, softened
  • 1 1/2 cups baby spinach, stems removed, chopped
  • 1 1/2 cups Colby Jack cheese or Mexican blend cheese, shredded
  • 1/2 cup salsa, store-bought or homemade
  • 1/3 cup sour cream
  • salt, to taste
  • pepper, to taste
  • 12 (6-inch) corn tortillas

Optional toppings:

  • lettuce, to taste, shredded
  • tomatoes, to taste, chopped
  • sour cream, to taste
  • pico de gallo, to taste

Directions

Step 1 –Fill a saucepan with 1/2-inch of the oil and heat over medium heat until it reaches 350 degrees F.

Step 2 –While the oil is heating, in a large bowl, mix the chicken, the cream cheese, the spinach, the shredded cheese, the salsa, 1/3 cup of the sour cream, the salt, and the pepper together.

Step 3 –Add a few tablespoons of the chicken mixture to the center of a tortilla and spread it out.

Step 4 –Roll the tortilla up and use tongs to carefully place it, seam-side down, in the hot oil.

Step 5 –Cook the filled tortilla until it is golden-brown on both sides, about 2-3 minutes.

Step 6 –Transfer the tortilla on paper towels to drain.

Step 7 –Repeat the cooking process until all of the tortillas have been filled, rolled, and fried.

Step 8 –Serve the taquitos with the lettuce, the tomatoes, the sour cream, and the pico de gallo.
