Ingredients
- vegetable oil, to taste, for frying
- 1/3 cup all-purpose flour
- 1/8 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon paprika
- 1 egg, white and yolk separated
- 3/4 cup frozen corn, thawed
- parsley, to taste, chopped, for garnish

Directions
Step 1 –In a deep-fat fryer, add the vegetable oil and heat to 375 degrees F.
Step 2 –In a medium bowl, add the flour, the salt, the baking powder, and the paprika and stir to combine.
Step 3 –In a large bowl, beat the egg yolk.
Step 4 –Add the corn to the beaten egg yolk and stir to combine.
Step 5 –Add the flour mixture to the corn mixture and mix well to combine.
Step 6 –In a medium bowl, add the egg white and use an electric hand mixer to beat until soft peaks form.
Step 7 –Fold the beaten egg white into the corn mixture.
Step 8 –In heaping tablespoons, drop the corn mixture, in batches, into the heated oil and fry until they are golden-brown, about 3-4 minutes.
Step 9 –Place the corn fritters on a paper-towel-lined plate to drain.
Step 10 –Serve the corn fritters garnished with the parsley.
