Grandma’s Potato Bake

Every Sunday our grandma has the whole family over for a massive feast. There are hams and turkeys, macaroni and veggies, salads and desserts… everything you could possibly think of. Every. Single. Sunday. She’s impressive and we absolutely love her for it because it’s one of our favorite traditions. She switches up the sides quite often, but the one we can always count on to be there is Grandma’s Potato Bake. It’s quite simple but also totally out of this world! She throws in some tender red potatoes, a tangy onion, salty bacon, and, of course, some butter, and then bakes it all until the flavors perfectly combine and it achieves the prime level of crispiness. It’s delicious, y’all! We’re so glad Grandma’s Potato Bake is her Old Faithful because we can’t begin to imagine a Sunday dinner without it!

Ingredients

  • 5 pounds red potatoes, thinly sliced or cubed
  • salt, to taste
  • ground black pepper, to taste
  • 1 onion, finely chopped
  • 6 slices bacon, chopped
  • 1/2 cup butter, diced
  • parsley, to taste, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a 9×13-inch casserole dish.

Step 3 –Place the potatoes in an even layer in the prepared casserole dish.

Step 4 –Season the potatoes with the salt and the pepper.

Step 5 –Top the potatoes with the onion and the bacon, then dot with the butter.

Step 6 –Cover the dish with foil.

Step 7 –Bake the potatoes in the preheated oven until they are tender, about 45 minutes,

Step 8 –Discard the foil and stir the potatoes.

Step 9 –Turn the oven to broiler and broil the potatoes, stirring every minute, until crispy, about 5 minutes.

Step 10 –Serve the potatoes garnished with the parsley.
