Ingredients

  • 1 (10-ounce) package yellow saffron rice, plus the ingredients called for on the package
  • 1 (10-ounce) can cheddar cheese soup
  • 1 (5-ounce) can evaporated milk
  • 1/2 teaspoon garlic powder
  • salt, to taste
  • pepper, to taste
  • 1 (10-12-ounce) can chicken, drained, can substitute any cooked chicken such as rotisserie chicken
  • 1 (14-ounce) can mixed veggies, drained
  • 1 cup cheddar cheese, optional, shredded, for topping
  • fresh herbs, such as parsley leaves, optional, to taste, for garnish

Directions

Step 1 –Cook the rice according to the package instructions.

Step 2 –Preheat the oven to 350 degrees F.

Step 3 –Grease an 8×8-inch baking dish.

Step 4 –Add the cooked rice to a bowl.

Step 5 –Stir the cheddar cheese soup, the evaporated milk, the garlic powder, the salt, the pepper, the chicken, and the veggies into the rice.

Step 6 –Spoon the rice mixture into the prepared baking dish.

Step 7 –Bake the rice mixture for 20 minutes.

Step 8 –Top the bake with the cheese and cook until the cheese is melted and the mixture is heated through, about 5 minutes.

Step 9 –Garnish with the fresh herbs and serve.
