Granny’s Icebox Sundae

She sure always knows how to treat us right! Granny’s Icebox Sundae is a treat the whole family looks forward to again and again, much like visiting Granny. Layers of creamy vanilla ice cream and semisweet chocolate perch atop a crunchy vanilla wafer crust, and then get frozen together, just waiting to be shared with everyone and anyone that comes a-callin’. You want ice cream, where ya gonna go? You know where! Granny’s Icebox Sundae will always be there waiting for you. She’s just the best… just like this dessert!

Ingredients

  • 2 cups semisweet chocolate chips
  • 1 (12-ounce) can evaporated milk
  • 1/2 teaspoon salt
  • 1 (12-ounce) package vanilla wafers, crushed
  • 1/2 cup butter, melted
  • 2 quarts vanilla ice cream, softened

Directions

Step 1 –Grease a 9×13-inch pan.

Step 2 –In a saucepan over medium heat, add the chocolate chips, the evaporated milk, and the salt and cook, while stirring, until melted.

Step 3 –Continue to cook the chocolate mixture, while stirring regularly, until thickened, about 25 minutes.

Step 4 –Transfer the chocolate mixture from the heat.

Step 5 –In a medium bowl, add the wafer crumbs and the melted butter and stir gently to combine.

Step 6 –Reserve 1 cup of the wafer mixture.

Step 7 –Press the remaining wafer mixture into the prepared pan.

Step 8 –Chill the wafer mixture in the pan in the refrigerator until set, about 10-15 minutes.

Step 9 –Pour the chocolate mixture over the wafer layer, covering it entirely.

Step 10 –Cover the pan and freeze until the chocolate is firm, about 10-15 minutes.

Step 11 –Spread the ice cream over the top of the chocolate layer.

Step 12 –Sprinkle the reserved wafer crumbs over the ice cream layer.

Step 13 –Transfer the pan to the freezer and freeze until set, at least 2 hours.

Step 14 –Serve.
