Ingredients

  • 3 tablespoons olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, chopped
  • 2 quarts water
  • 4 teaspoons chicken bouillon granules
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 head cabbage, cored and coarsely chopped
  • 1 (14.5-ounce) can diced Italian-style stewed tomatoes, drained

Directions

Step 1 –In a large stockpot over medium heat, heat the olive oil.

Step 2 –Stir the onion and the garlic into the hot oil and cook until the onion becomes transparent, about 5 minutes.

Step 3 –Add the water, the chicken bouillon, the salt, and the pepper to the onion mixture and bring to a boil.

Step 4 –Stir the cabbage into the soup mixture and reduce the heat to a simmer.

Step 5 –Cook until the cabbage wilts, about 10 minutes.

Step 6 –Stir the tomatoes into the soup and bring the soup to a boil.

Step 7 –Reduce the heat to a simmer and cook the soup, stirring often, until it is heated through and the flavors have melded together, about 15-30 minutes.

Step 8 –Serve.
