Every year, the Heisman Memorial Trophy is awarded to the most outstanding player in college football. In the spirit, the name should only be invoked by the most outstanding dessert! The Heisman Crumble sautés fresh, floral, juicy peaches in butter, sugar, and spices until it becomes tender and sweet, then tops it with a cookie crumble and crunchy, buttery pecans. Baked golden-brown and served with ice cream, the Heisman Crumble can certainly go the distance; it’s already a champion in the eyes of your tastebuds!
Ingredients
- 2 tablespoons butter
- 4 (15.25-ounce) cans sliced peaches, drained
- 1 3/4 cups sugar, divided
- 3 teaspoons vanilla extract, divided
- 1 teaspoon crystallized ginger, finely chopped
- 1/2 teaspoon ground cinnamon
- 1 cup shortening
- 1/4 cup brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon almond extract
- 2 1/2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- pecans, optional, chopped
- coarse sugar, optional
- vanilla ice cream, optional
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –In a 12-inch cast-iron or other ovenproof skillet over medium heat, melt the butter.
Step 3 –Add the peaches, 3/4 cup of the sugar, 2 teaspoons of the vanilla, the ginger, and the cinnamon.
Step 4 –Cook and stir the peaches until they sand begin to break down, about 10 minutes.
Step 5 –Transfer the skillet from the heat.
Step 6 –In a large bowl, cream the shortening, the brown sugar, and the remaining sugar until light and fluffy, about 5-7 minutes.
Step 7 –Beat in the egg, the almond extract, and the remaining vanilla.
Step 8 –In another bowl, whisk together the flour, the cornstarch, the baking soda, and the baking powder.
Step 9 –Gradually add the dry ingredients mixture to the cream mixture until a dough forms.
Step 10 –Crumble the dough over the peaches in the skillet.
Step 11 –Sprinkle the top with the pecans and the coarse sugar.
Step 12 –Bake until a toothpick inserted into the center comes out clean, about 35-40 minutes.
Step 13 –Cool on a wire rack and serve with the ice cream.
