Honest Abe’s Apple Bread Pudding

Ingredients

For the apple bread pudding:

  • 12 small baking apples, peeled, cored, and thinly sliced
  • 1 large lemon, juiced
  • 1 teaspoon lemon zest
  • 1 teaspoon nutmeg
  • 1 1/4 cups brown sugar
  • 1/4 cup unsalted butter, chopped into small chunks, plus more, for greasing a baking dish
  • 1 cup breadcrumbs

For the cream sauce:

  • 1 pint heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon nutmeg
  • 1 teaspoon almond extract

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish with unsalted butter.

Step 3 –Place the apple slices in a large mixing bowl.

Step 4 –Add the lemon juice, the lemon zest, and 1 teaspoon of the nutmeg to the apples and toss with a spatula until the apples are evenly coated.

Step 5 –Spread 1/2 of the apple slices onto the bottom of the prepared dish and ensure the entire surface is covered.

Step 6 –Sprinkle the apples with 1/2 of the brown sugar.

Step 7 –Dot 1/2 of the butter across the top of the sugar and sprinkle with 1/2 of the breadcrumbs.

Step 8 –Repeat the layers once, starting with the apples and ending with the breadcrumbs.

Step 9 –Bake the pudding, uncovered, until the edges are brown, the pudding is cooked through, and the apples are soft, about 50 minutes-1 hour.

Step 10 –While the pudding is baking, in a small pot over medium heat, slowly warm the heavy whipping cream, whisking occasionally, until it starts to boil.

Step 11 –Whisk the powdered sugar, the remaining nutmeg, and the almond extract into the whipping cream.

Step 12 –Transfer the pot from the heat and strain the sauce through a mesh strainer or sieve into a serving dish.

Step 13 –Serve the bread pudding topped with the cream sauce.
