Hot & Sour Soup

Hot & Sour Soup is such an essential part of Chinese cuisine, it’s hard to imagine not breaking out the takeout menu and ordering a bowl of it. But you don’t even need the takeout menu! Hot & Sour Soup can be made in your own kitchen anytime, in less time than it takes to wait for delivery! The warming, fragrant, savory soup still has the essential egg whisps and slices of tender tofu, making it just as hearty and satisfying as anything you could find at your local restaurant. Soon enough, you’ll be wanting this over chicken noodle when you feel the need for soup to warm you up and make everything feel better!

Ingredients

  • 6 cups beef broth
  • 1/2 cup mushrooms, sliced
  • 1/4 cup soy sauce
  • 1/4 cup rice wine vinegar or white vinegar
  • 1 tablespoon sriracha
  • 1 teaspoon white pepper
  • 3 tablespoons cornstarch
  • 3 tablespoons water, cold
  • 2 large eggs, well-beaten
  • 6 ounces firm tofu, sliced into thin strips
  • 2 green onions, sliced

Directions

Step 1 –In a large saucepan over medium-high heat, bring the beef broth to a simmer.

Step 2 –Add the mushrooms, the soy sauce, the vinegar, the sriracha, and the white pepper.

Step 3 –Simmer the mixture for 5 minutes.

Step 4 –In a small bowl, whisk the cornstarch and the cold water together to make a slurry.

Step 5 –Add the slurry to the soup and stir well.

Step 6 –Simmer until the soup starts to thicken, about 5 minutes.

Step 7 –While gently stirring in a circular motion, slowly pour in the eggs. This should create the distinctive whisps of egg.

Step 8 –Add the tofu and the green onions and stir.

Step 9 –Serve immediately.
