Ingredients

For the Jamaican seasoning:

  • 1 tablespoon garlic powder
  • 2-3 teaspoons cayenne pepper
  • 2 teaspoons onion powder
  • 2 teaspoons dried parsley
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 1 teaspoon ground allspice
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper, dried and crushed
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

For the chicken:

  • 1 tablespoon Jamaican Seasoning
  • 3 large chicken breasts, pounded to 1/2 inches thick

For the sauce:

  • 1/3 cup mayo
  • 2 teaspoons Jamaican seasoning, plus more to taste

For serving:

  • 2 cups cabbage, optional, thinly sliced, for serving
  • 8 soft tortillas
  • 2 tablespoons cilantro, optional, chopped, for serving
  • lime wedges, optional, to taste, for serving

Directions

Step 1 –Combine the garlic powder, cayenne pepper, onion powder, parsley, sugar, salt, paprika, allspice, black pepper, red pepper, nutmeg, and cinnamon in a small bowl.

Step 2 –Rub 1 tablespoon of the Jamaican seasoning on both sides of the chicken breasts.

Step 3 –In a large skillet, cook the chicken over medium heat until completely cooked through, reaching 165 degrees F, about 4-5 minutes.

Step 4 –Remove the chicken from the heat and allow it to cool

Step 5 –Slice the chicken into strips.

Step 6 –Whisk together the mayo and 2 teaspoons of the Jamaican seasoning.

Step 7 –Assemble the tacos by placing the cabbage on each tortilla, topping with the chicken, and drizzling the sauce on the top.

Step 8 –Serve the tacos with fresh cilantro and lime wedges!
