Ingredients

For the tacos:

  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 1/2 pound chicken, cooked and shredded
  • 1 (1-ounce) packet taco seasoning
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 (4.5-ounce) can chopped green chiles, drained
  • 10 hard taco shells
  • 1/2 (16-ounce) can refried beans
  • 2 cups Mexican blend cheese, shredded

Optional toppings:

  • jalapeños, to taste, sliced
  • sour cream, to taste
  • salsa, to taste
  • cilantro, to taste, chopped
  • lettuce, to taste, shredded

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Coat a 9×13-inch baking dish with nonstick cooking spray.

Step 3 –Heat the olive oil in a medium skillet over medium heat.

Step 4 –Add the onion and cook until it is translucent and fragrant, about 2-3 minutes.

Step 5 –Add the chicken, the taco seasoning, the tomatoes, and the green chiles and stir to combine.

Step 6 –Adjust the heat to low and simmer the chicken mixture, about 5-8 minutes.

Step 7 –Place the taco shells, standing up, into the prepared baking dish.

Step 8 –Bake the taco shells until they are crisp, about 5 minutes.

Step 9 –Spoon 1 tablespoon of the beans into the bottom of the taco shells.

Step 10 –Spoon the chicken mixture over the bean layer, filling the shells almost to the top.

Step 11 –Generously sprinkle the cheese over the tops of each of the tacos.

Step 12 –Bake the tacos until the cheese is melted and the edges of the shells are browned, about 7-10 minutes.

Step 13 –Top the tacos with the jalapeños, the sour cream, the salsa, the cilantro, and the lettuce.

Step 14 –Serve.
