Ingredients

  • 1/2 cup water
  • 4 tablespoons butter
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon granulated sugar
  • 1 teaspoon freshly ground white pepper, optional
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup Gruyère, plus more for topping, freshly grated

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –In a medium saucepan, combine the water, the butter, the salt, the sugar, and the white pepper and bring to a boil.

Step 4 –Add the flour to the water mixture and stir with a wooden spoon until a smooth dough forms.

Step 5 –Cook the dough mixture until the dough pulls away from the pan, a ball forms, and a film develops on the bottom of the pan, about 2 minutes.

Step 6 –Transfer the dough to a bowl and continue mixing with the wooden spoon to slightly cool, about 1 minute.

Step 7 –Beat the eggs into the dough, one at a time, until smooth and fully incorporated after each addition.

Step 8 –Fold 1/2 cup of the cheese into the batter mixture.

Step 9 –Transfer the batter mixture into a piping bag or use two small cookie scoops to create small, inch-wide mounds on the prepared baking sheet, placing them about 1-inch apart.

Step 10 –Top with the remaining cheese and bake until puffed and golden, about 20-25 minutes.

Step 11 –Serve.
