Ingredients

  • 14 ounces cauliflower florets, cut into bite-size pieces
  • 1 cup water
  • 2 pounds Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 1 green pepper, cut into bite-size pieces
  • 1 1/2 cups low-carb pasta sauce
  • 2 1/2 ounces pepperoni
  • 12 ounces mozzarella cheese, shredded
  • 1/4 cup powdered parmesan cheese
  • 1 teaspoon Italian seasoning

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Spray a 13×9-inch casserole dish with non-stick spray.

Step 3 –In a microwave-safe bowl, add the cauliflower and the water.

Step 4 –Cover the bowl with a damp paper towel and microwave the cauliflower on high until the cauliflower is tender, about 3 minutes.

Step 5 –Drain the cauliflower and pat dry with a paper towel. Set the cauliflower aside.

Step 6 –In a large skillet over medium-high heat, cook the Italian sausage until thoroughly browned, about 15 minutes.

Step 7 –Drain the excess fat from the pan and set the sausage aside.

Step 8 –In the same skillet, add the olive oil and the mushrooms and sauté over medium-high heat for 10 minutes. Set the mushrooms aside.

Step 9 –In a large bowl, combine the cauliflower, the Italian sausage, the mushrooms, and the green peppers and mix well. Set the mushroom mixture aside.

Step 10 –Spread 1/2 cup of the pasta sauce over the bottom of the prepared casserole dish.

Step 11 –Spread 1/2 of the mushroom mixture over the pasta sauce layer.

Step 12 –Spread 1/2 cup of the pasta sauce over the top of the mushroom mixture layer.

Step 13 –Place 1/2 of the pepperoni on top of the pasta sauce layer.

Step 14 –Spread 1/2 of the mozzarella cheese over the top of the pepperoni layer.

Step 15 –Spread the remaining mushroom mixture over the top of the mozzarella cheese layer.

Step 16 –Reserve 10 individual pepperoni and spread the remaining pepperoni over the top of the mushroom mixture layer.

Step 17 –Spread the remaining pasta sauce over the pepperoni layer.

Step 18 –Sprinkle the remaining mozzarella cheese over the top of the pasta sauce layer.

Step 19 –In a small bowl, combine the parmesan cheese and the Italian seasoning.

Step 20 –Sprinkle the parmesan mixture over the top of the casserole and place the 10 remaining pepperoni on top of the casserole.

Step 21 –Place the casserole into the oven and bake until the casserole is warmed through and the cheese is fully melted, about 30 minutes.

Step 22 –Serve!
