Ingredients

  • 1 pound ground beef
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1 egg, lightly beaten
  • 8 ounces canned diced tomatoes, drained
  • 1/2 cup quick-cooking oats
  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a large bowl, mix the ground beef, the salt, the pepper, the onion, the bell pepper, the egg, the tomatoes, and the oats together.

Step 3 –Place the meat mixture in a 9×5-inch loaf pan and shape it into a loaf.

Step 4 –In a small bowl, mix the ketchup, the brown sugar, and the mustard together and spread it over the loaf.

Step 5 –Bake the meatloaf until the meat is cooked through, about 1 hour.

Step 6 –Slice and serve.
