MeMaw’s Homemade Tuna Patties are her favorite, a crispy on the outside, juicy and savory on the inside patty of seafood flavor. The interior is creamy, tangy, and with just a touch of sweetness for maximum satisfaction. MeMaw’s Homemade Tuna Patties are fantastic as a lunch or dinner served alongside fries or a fresh salad. It certainly beats your typical tuna fish dish!

Ingredients
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 cup evaporated milk
- 1 (6.4-ounce) pouch light tuna in water
- 1/3 cup plus 1/2 cup dry breadcrumbs, divided
- 1 green onion, finely chopped
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- neutral-flavored oil, to taste
Directions
Step 1 –In a small saucepan, melt the butter over medium heat.
Step 2 –Stir in the flour until smooth and the raw flour smell dissipates, for about 2 minutes.
Step 3 –Gradually whisk in the milk.
Step 4 –Bring the milk mixture to a boil, stirring constantly.
Step 5 –Cook until thickened, about 2-3 minutes.
Step 6 –Remove the milk mixture from the heat and transfer it to a small bowl. Allow it to cool.
Step 7 –Stir in the tuna, 1/3 cup of the breadcrumbs, the green onion, the lemon juice, the salt, and the pepper.
Step 8 –Cover the bowl and refrigerate for at least 30 minutes.
Step 9 –Place the remaining breadcrumbs in a shallow bowl.
Step 10 –Drop 1/3 cup of the tuna mixture into the breadcrumbs.
Step 11 –Gently coat the tuna and shape it into a 1/2-inch-thick patty.
Step 12 –Repeat with the remaining tuna mixture.
Step 13 –Heat the oil in a large skillet over medium heat.
Step 14 –Add the tuna patties to the hot oil in batches and cook until golden-brown and cooked through, about 2-3 minutes per side.
Step 15 –Drain the patties on paper towels.
Step 16 –Serve!
