Moist Banana Bread

If something quick, delicious, and comforting is on the dessert menu, there aren’t many options better than this! Moist Banana Bread is sure to make your heart (and your sweet tooth) incredibly happy! Blended with loads of ripe bananas and baked until golden-brown, with one bite, you will be tempted to go back for another slice. And an added benefit of baking up some Moist Banana Bread is that your house will smell divine. It doesn’t get any better than this!

Ingredients

  • 1 1/2 cups all-purpose flour, plus more, to taste, for dusting the pan
  • 1 cup walnuts
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 3 medium bananas, very ripe
  • 2 large eggs, lightly beaten
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raisins

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9 1/4×5 1/4×2 3/4-inch loaf pan, then using the extra flour, lightly dust the greased pan.

Step 3 –In a large skillet over medium, add the walnuts and cook, stirring constantly to avoid burning, until lightly roasted.

Step 4 –Transfer the roasted walnuts to a cutting board and coarsely chop them.

Step 5 –Allow the chopped walnuts to cool to room temperature.

Step 6 –In a large bowl, add the butter and the granulated sugar and use an electric hand mixer to cream them together.

Step 7 –In a medium bowl, add the bananas and use a fork to mash until it forms the consistency of chunky applesauce.

Step 8 –Add the mashed bananas and the eggs to the butter mixture and mix until well-blended.

Step 9 –In another medium bowl, add the remaining 1 1/2 cups of the flour, the baking soda, and the salt and whisk to combine.

Step 10 –Add the flour mixture to the batter mixture and stir to combine.

Step 11 –Add the vanilla extract, the chopped walnuts, and the raisins to the batter mixture and stir to combine.

Step 12 –Evenly pour the batter mixture into the prepared loaf pan and bake until a toothpick inserted into the center comes out clean, about 55 minutes-1 hour.

Step 13 –Transfer the banana bread to a wire rack and let it rest in the pan, about 10 minutes.

Step 14 –Invert the banana bread onto the wire rack and let it cool.

Step 15 –Slice and serve.
