Oatmeal Dinner Rolls

A great dinner isn’t complete without a few rolls on hand to soak up sauces, drippings, or just a pat of butter! Oatmeal Dinner Rolls are extra hearty and substantial, perfect for picking up thicker sauces and creating contrast with their touch of brown sugar smoky sweetness. A few clouds of Oatmeal Dinner Rolls will create a skyscape of flavors on your plate, no matter what they share that plate with!

Ingredients

  • 2 cups water, plus 1/3 cup warm water at 115 degrees F, divided
  • 1 cup quick-cooking oats
  • 3 tablespoons butter
  • 1 (.75-ounce) package active dry yeast
  • 1/3 cup brown sugar, packed
  • 1 tablespoon sugar
  • 1 1/2 tablespoons salt
  • 5 1/4 cups all-purpose flour, plus more for a worksurface

Directions

Step 1 –Grease a large bowl.

Step 2 –Grease two 9-inch round baking pans.

Step 3 –In a large saucepan, bring 2 cups of the water to a boil.

Step 4 –Add the oats and the butter to the water and cook for 1 minute, stirring frequently.

Step 5 –Transfer the oat mixture from the heat and let it cool to lukewarm.

Step 6 –In a large bowl, stir the yeast and the remaining warm water together until yeast has dissolved.

Step 7 –Add the oat mixture, the brown sugar, the sugar, the salt, and 4 cups of the flour to the yeast and beat until smooth.

Step 8 –Add enough of the remaining flour to form a soft dough.

Step 9 –Turn the dough onto a floured surface and knead it until it is smooth and elastic, about 6-8 minutes.

Step 10 –Add the dough to the prepared greased bowl, turning once to grease the top of the dough.

Step 11 –Cover the bowl and transfer the bowl to a warm place until the dough has doubled in size, about 1 hour.

Step 12 –Punch the dough down and allow it to rest for 10 minutes.

Step 13 –Shape the dough into 18 balls and place the balls into the prepared baking pans.

Step 14 –Cover the baking pans and let the balls rise until they have doubled, about 45 minutes.

Step 15 –Preheat the oven to 350 degrees F.

Step 16 –Bake the rolls until they are golden-brown, about 20-25 minutes.

Step 17 –Transfer the pans to wire racks to cool.

Step 18 –Serve.
