Old-World German Potato Salad

New is fun, but sometimes when you have a good thing going, sticking to tradition is worth it. Especially when it comes to food! The more you make a dish, the better it becomes. That’s how we feel about this Old-World German Potato Salad! It’s been around for years and years, and every time we enjoy it, we’re certain it tastes better than the time before. The warm potatoes seem more tender and the tangy, perfectly seasoned dressing seems to be all the more flavorful. The phrase, “Don’t fix what’s not broken,” is very applicable to Old-World German Potato Salad! It’s so good… why would you even think about trying anything else?!

Ingredients

  • 2 pounds white or gold potatoes
  • 3/4 teaspoon salt, plus more, to taste
  • 1/4 teaspoon pepper, plus more, to taste
  • 1/2 cup white onion, finely diced
  • 3 tablespoons apple cider or white wine vinegar
  • 1/4 cup vegetable oil
  • 2 tablespoons parsley or chives, optional, chopped, for garnish

Directions

Step 1 –In a large pot of water, boil the unpeeled potatoes until soft, about 25 minutes.

Step 2 –Drain the potatoes and lay them in a single layer on a flat surface until they are cool enough to be handled, but still quite warm.

Step 3 –Gently peel the skin off the potatoes with a thin knife or a potato peeler.

Step 4 –Slice the potatoes into very thin discs and place them in a medium bowl.

Step 5 –Season the potatoes with the salt and the pepper and gently stir to coat.

Step 6 –Add the onions and the vinegar into the potato salad mixture, stirring to combine.

Step 7 –Stir the oil into the potato salad mixture.

Step 8 –Taste the potato salad, adjusting the salt and the pepper as desired.

Step 9 –Garnish with the parsley and serve.
