Out-of-this-World Corn Dip

Out-of-this-World Corn Dip creates a party vibe and then kicks it up a notch or two! It’s a blast of Tex-Mex flavors—spicy, cheesy, sweet, tangy—all ready to get scooped up by crunchy corn chips. It’s filled with corn, peppers, and other munching delights, to create an irresistible combo! Get ready to have your mind (and your guests’ minds) blown by some Out-of-this-World Corn Dip!

Ingredients

  • 3 (11-ounce) cans Mexican-style corn with red and green peppers, drained
  • 1 (7-ounce) can chopped green chiles, drained
  • 1 (6-ounce) can chopped jalapeño peppers, drained and liquid reserved
  • 1/2 cup green onion, chopped
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 (16-ounce) package sharp cheddar cheese, shredded
  • corn chips, to taste, for serving

Directions

Step 1 –In a large bowl, add the canned corn and peppers, the green chiles, the jalapeño peppers plus their reserved liquid (a little at a time depending on your desired spice level), the green onion, the mayonnaise, the sour cream, the pepper, the garlic powder, and the cheddar and mix to combine.

Step 2 –Cover the bowl and refrigerate until the flavors meld together, at least 2 hours and up to overnight.

Step 3 –Serve with the corn chips.
