Corn Chip Pie is one of those Southern favorites that charms just about everyone that tries it. The corn chip crust is distinctly crunchy and flavorful, offering a welcoming contrast to the spicy, hearty, meaty chili and melty cheese. It’s a fantastically easy and speedy dish to make too, perfect for when time is short, but the desire for comfort is great! No matter where in the U.S. you live, you’ll find a new favorite with this Corn Chip Pie!
Ingredients
- 3 cups corn chips
- 3/4 cup onion, chopped
- 1 cup cheddar cheese, shredded
- 2 1/2 cups prepared chili
- jalapeño, optional, to taste, sliced, for garnish
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Spread about 2 cups of the corn chips in a baking dish.
Step 3 –Add 1/2 of the onion and 1/2 of the cheddar cheese over the chip layer.
Step 4 –Top the cheese layer with the chili.
Step 5 –Spread the remaining corn chips over the chili, followed by the remaining onion and the remaining cheddar cheese.
Step 6 –Bake the pie in the oven until it is hot and bubbly, about 15-20 minutes.
Step 7 –Serve garnished with the jalapeño slices.
