Overnight Blueberry Bake

You probably thought you’d never experience that same kind of enthusiasm again as an adult, but this Overnight Blueberry Bake is here to delightfully prove you wrong! Get ready to feel that child-like wonder yet again every time this sweet, fluffy, blueberry-filled treat is soaking in the fridge. After its overnight chilling session and a few minutes of baking the next morning, you’ll shriek with pure joy as you taste this highly anticipated breakfast bite. Even adult life can be full of magically simple pleasures, and they come in the form of things like an Overnight Blueberry Bake! They’re there, you just have to find them!

Ingredients

  • 1 cup whole-wheat pastry flour
  • 3/4 cup yellow cornmeal
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon, divided
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger, plus more, to taste, for topping
  • 1 cup plain Greek fat-free yogurt
  • 3 eggs, lightly beaten
  • 1/3 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon butter flavor extract
  • 2 cups frozen blueberries, divided
  • 2 tablespoons dark brown sugar, packed
  • imitation whipped cream, optional, to taste, thawed, for serving

Directions

Step 1 –Lightly coat a rectangular 2-quart baking dish with cooking spray.

Step 2 –In a large bowl, stir the pastry flour, the cornmeal, the granulated sugar, 1 teaspoon of the cinnamon, the baking soda, the salt, and 1/2 teaspoon of the ginger together.

Step 3 –In a medium bowl, whisk the yogurt, the eggs, the oil, the applesauce, and the butter flavor extract until well-mixed.

Step 4 –Add the egg mixture to the flour mixture and stir until just combined.

Step 5 –Evenly pour 1/2 of the batter into the prepared baking dish.

Step 6 –Sprinkle the batter with 1 cup of the blueberries and top with the remaining batter.

Step 7 –Cover the batter mixture and refrigerate for at least 8 hours and up to 24 hours.

Step 8 –Preheat the oven to 350 degrees F.

Step 9 –Allow the batter mixture to stand at room temperature while the oven preheats.

Step 10 –In a small bowl, toss the remaining blueberries, the brown sugar, and the remaining cinnamon together.

Step 11 –Sprinkle the blueberry mixture over the batter.

Step 12 –Bake the blueberry casserole, uncovered, until a toothpick inserted into the center comes out clean, about 35 minutes.

Step 13 –Serve the bake topped with the imitation whipped cream and sprinkled with the extra ginger.
