Our papa isn’t one for sweets so when he found a cake that he loved so much, we absolutely had to name it Papa’s Favorite Cake. Being a farmer and avid gardener, he’s naturally a veggie lover, which is no surprise that his most treasured treat is this moist, spicy carrot cake! He would never admit it, but we think his favorite part is the creamy, fluffy, sugary, vanilla frosting spread on top. We make Papa’s Favorite Cake for any occasion: his birthday, big accomplishments, and really, anytime we want to show him how much we love him! You should try a slice; your life will be sweeter because of it!
Ingredients
For the cake:
- 2 cups granulated sugar
- 1 cup oil
- 4 eggs
- 2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 2 cups carrots, finely grated
For the frosting:
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 2 1/2-3 cups powdered sugar
- 2 teaspoons vanilla
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 13×18-inch jelly roll pan.
Step 3 –In a large bowl, mix the granulated sugar and the oil together.
Step 4 –Beat the eggs into the sugar mixture.
Step 5 –Add the flour, the cinnamon, the baking soda, the allspice, the salt, and the baking powder into the sugar mixture and mix until combined.
Step 6 –Fold the carrots into the batter.
Step 7 –Spread the batter into the prepared baking pan.
Step 8 –Bake the cake until a toothpick inserted in the center comes out clean, about 25 minutes.
Step 9 –Allow the cake to cool completely.
Step 10 –While the cake is cooling, in a bowl, beat the cream cheese and the butter together.
Step 11 –Mix the powdered sugar into the cream cheese mixture until smooth. If the icing is runny, add more of the powdered sugar.
Step 12 –Mix the vanilla into the icing mixture.
Step 13 –Spread the icing evenly over the cooled cake.
Step 14 –Slice and serve.
