Ingredients

  • 1 (16-ounce) bag tri-color coleslaw mix
  • water, to taste, cold
  • salt, to taste
  • 3/4 cup mayonnaise
  • 2 tablespoons granulated sugar
  • 1 (20-ounce) can pineapple tidbits, juice drained and 1 tablespoon reserved, tidbits patted dry with paper towels
  • 1 tablespoon lime juice
  • 1/2 tablespoon apple cider vinegar
  • pepper, to taste
  • 1/2 cup green onions, chopped
  • 1/3 cup red onion, chopped
  • 1/3 cup cilantro, chopped
  • 1 jalapeño, stem and seeds removed, chopped

Directions

Step 1 –In a large bowl, add the coleslaw mix and cover it with the water.

Step 2 –Add the salt to the coleslaw mix and let it sit, about 15-30 minutes.

Step 3 –Drain the coleslaw well and pat it dry with paper towels.

Step 4 –In a large salad bowl, whisk the mayonnaise, the sugar, the reserved pineapple juice, the lime juice, the apple cider vinegar, the salt, and the pepper together until smooth.

Step 5 –Add the green onions, the red onion, the cilantro, the pineapple tidbits, the jalapeño, and the coleslaw mix to the dressing and toss well to coat.

Step 6 –Serve the slaw immediately or refrigerate, covered, for up to 2 days.
