Power Salad

Preparation sure does make life easier! While we can’t prepare for everything we might encounter in our day, we can make lunch much easier with this Power Salad. Whether you are making a salad for just one or even 21, the tender, flavorful chicken packed with delicious great northern beans, garbanzo beans, quinoa, red onions, feta, juicy tomatoes, and crunchy greens tossed with creamy hummus and a sassy balsamic vinaigrette can be the answer to your next salad craving. This Power Salad is a systematically fresh bite of energy that will put that spark back into your lunch time.

Ingredients

  • 4 cups romaine, or other crunchy greens of your choice
  • 3 ounces chicken breast, cooked and cut into bite-size pieces
  • 2 tablespoons great northern beans
  • 2 tablespoons garbanzo beans
  • 2 tablespoons quinoa or quinoa/brown rice blend, cooked
  • red onion, to taste, sliced
  • 2 tablespoons feta cheese, crumbled
  • grape or cherry tomatoes, to taste, halved
  • 2 tablespoons hummus
  • 2 tablespoons light balsamic vinaigrette

Directions

Step 1 –In a serving bowl, add the greens, the chicken, the great northern beans, the garbanzo beans, the quinoa, the red onion slices, the feta, the tomatoes, the hummus, and the balsamic vinaigrette, and toss to combine or arrange in a dish of your choosing.

Step 2 –Serve.
