Ingredients

  • 1 tablespoon olive oil
  • 4 large eggs, lightly beaten
  • 1/4 cup half and half
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 8 mini croissants, halved horizontally
  • 4 ounces ham, thinly sliced
  • 4 slices cheddar cheese, halved

Directions

Step 1 –Heat the olive oil in a large skillet over medium-high heat.

Step 2 –Add the eggs to the skillet and cook, whisking, until they just begin to set, about 4-5 minutes.

Step 3 –Gently whisk in the half and half.

Step 4 –Season with salt and pepper, to taste.

Step 5 –Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes.

Step 6 –Set the eggs aside.

Step 7 –Fill the croissants with the eggs, ham and cheese to make 8 sandwiches.

Step 8 –Wrap the sandwiches tightly in plastic wrap and place them in the freezer.

Step 9 –To reheat the sandwiches, remove the plastic wrap from the frozen sandwich and wrap in a paper towel.

Step 10 –Place the sandwich into the microwave until heated through completely, about 1-2 minutes.
