Pumpkin Delight

Pumpkin Delight actually follows in the new tradition of the dump cake, where yellow cake mix is mixed with fruit (in this case the autumnal sweetness of pumpkin) to make a treat that is easy to whip up and even easier to love! The warming spices, the creamy rich flavor, the texture, the crunchy pecans… Yep, every part of this is just a delight, even more so when served alongside ice cream. Pumpkin Delight just brings extra joy, which makes it a dessert worth eating!

Ingredients

  • 1 (15-ounce) can solid-pack pumpkin
  • 1 (12-ounce) can evaporated milk
  • 3 large eggs
  • 1 cup sugar
  • 4 teaspoons pumpkin pie spice
  • 1 (15.25-ounce) package yellow cake mix
  • 3/4 cup butter, melted
  • 1 1/2 cups walnuts, chopped
  • vanilla ice cream or whipped cream, optional, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large bowl, whisk the pumpkin, the evaporated milk, the eggs, the sugar, and the pumpkin pie spice together until smooth.

Step 4 –Transfer the mixture to the prepared baking dish.

Step 5 –Sprinkle the mixture with the cake mix and drizzle with the butter.

Step 6 –Top the batter with the walnuts.

Step 7 –Bake until a knife inserted in the center comes out clean, about 1 hour.

Step 8 –Serve with the ice cream.
