Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 4 large eggs, yolks and whites separated
  • cream of tartar, to taste
  • 5 tablespoons granulated sugar, divided
  • 1 cup milk
  • 1 cup buttermilk
  • 1/4 cup canola oil
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • apple cider syrup, optional, for serving maple syrup, optional, for serving
  • butter pecan syrup, optional, for serving

Directions

Step 1 –Preheat the oven to 225 degrees F.

Step 2 –Preheat a Belgian waffle iron or regular waffle iron to medium heat.

Step 3 –In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg for 20 seconds.

Step 4 –Create a well in the center of the dry ingredient mixture, then set it aside.

Step 5 –To a separate medium mixing bowl, add the egg whites and cream of tartar.

Step 6 –Using an electric hand mixer set on high speed, whip the egg and cream of tartar until soft peaks form.

Step 7 –Add 2 tablespoons of the granulated sugar and whip until medium-stiff peaks form.

Step 8 –In a separate medium mixing bowl, whisk together the milk, buttermilk, canola oil, pumpkin puree, vanilla extract, egg yolks and the remaining 3 tablespoons of the granulated sugar.

Step 9 –While whisking, slowly pour the milk mixture into the well in the flour mixture and mix just until combined. The batter will be slightly lumpy.

Step 10 –Gently fold in the egg whites into the batter.

Step 11 –Spray the waffle iron lightly and evenly with non-stick spray.

Step 12 –Pour the necessary amount of batter into the waffle iron and cook according to the manufacturer’s directions.

Step 13 –Keep the waffles warm in the preheated oven and repeat the process with the remaining batter.

Step 14 –Serve warm with your syrup of choice.
