Ingredients

  • 4 chicken breasts, boneless
  • 1 cup buttermilk
  • 2 teaspoons taco seasoning
  • salt, to taste
  • pepper, to taste
  • 1 (10 ounce) can tomatoes and chilies, drained
  • 1 cup queso
  • 1 cup pepper jack and cheddar cheeses, shredded

Directions

Step 1 –Place the chicken in a ziplock bag with the buttermilk.

Step 2 –Let the chicken marinate for at least 30 minutes or up to overnight.

Step 3 –Drain and pat dry.

Step 4 –Preheat the oven to 375 degrees F.

Step 5 –Drizzle the taco seasoning, salt, and pepper onto the chicken.

Step 6 –Place the chicken in a glass 9×13-inch baking dish.

Step 7 –Pour half of the tomatoes and chiles onto the chicken.

Step 8 –Cover the chicken with the queso and place the remaining tomatoes on top.

Step 9 –Sprinkle with the grated cheese mixture.

Step 10 –Bake until the instant thermometer inserted into the thickest part of the chicken reads 155 degrees F, about F 25-30 minutes.

Step 11 –Remove the chicken from the oven and immediately tent with foil. They should rise to a safe serving temperature of 165 degrees F after 10 minutes of resting. If not, return them to the oven until they reach a safe temperature.
