Roasted Yukon Potatoes

Ingredients

  • 6 large Yukon Gold potatoes, peeled and diced
  • 1/4 cup olive oil
  • 1 1/2 teaspoons paprika
  • 1 1/4 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 1 teaspoon salt, plus more, to taste

Directions

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Line a rimmed baking sheet with parchment paper.

Step 3 –In a large bowl, add the potatoes.

Step 4 –In a small bowl, combine the olive oil, the paprika, the garlic powder, the onion powder, the cumin, the chili powder, the pepper, and the salt and stir well.

Step 5 –Pour the olive oil mixture over the potatoes and stir to coat.

Step 6 –Spread the potatoes onto the prepared baking sheet.
