Scalloped Pineapple Casserole

Ingredients

  • 3/4 cup butter, softened
  • 1 1/4 cups sugar
  • 3 large eggs
  • 1 (20-ounce) can crushed pineapple, well-drained
  • 1 1/2 teaspoons lemon juice
  • 4 cups white bread, crusts removed, cubed, and firmly packed

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease an 8-inch square baking dish.

Step 3 –In a large bowl, use a hand mixer to cream the butter and the sugar until the mixture is light and fluffy.

Step 4 –Add the eggs, one at a time, to the butter mixture and beat well after each addition.

Step 5 –With a large spoon or spatula, stir the crushed pineapple and the lemon juice into the butter mixture.

Step 6 –Gently fold the bread cubes into the pineapple mixture.

Step 7 –Pour the pineapple mixture into the prepared baking dish.

Step 8 –Bake the casserole, uncovered, until the top is lightly golden, about 40-45 minutes.

Step 9 –Plate and serve warm.
