Ingredients
- 2 1/2 cups all-purpose flour, plus more, to taste, for dusting a work surface
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/3 cup shortening
- 1 (15.75-ounce) can sweet potatoes, drained
- 3/4 cup 2% milk
Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –In a large bowl, combine 2 1/2 cups of the flour, the baking powder, and the salt.
Step 3 –Cut the shortening into the flour mixture until it resembles coarse crumbs.
Step 4 –In another bowl, mash the sweet potatoes and the milk together.
Step 5 –Add the sweet potato mixture to the flour mixture and combine.
Step 6 –Using the extra flour, dust a work surface and add the dough.
Step 7 –Knead the dough about 10 times and then roll it out to 1/2-inch thickness.
Step 8 –Cut the dough with a 2 1/2-inch biscuit cutter and place the rounds on ungreased baking sheets.
Step 9 –Bake the biscuits until golden-brown, 8-10 minutes.
Step 10 –Transfer the biscuits onto wire racks.
Step 11 –Serve.
