- 3 pounds chicken thighs, boneless and skinless
- 1 tablespoon curry powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon dried thyme
- 1 tablespoon packed brown sugar
- 1/2 cup chicken broth
- 1/2 cup golden raisins
- 1 (14.5-ounce) can diced tomatoes, undrained
- rice, optional, cooked, hot, for serving
- parsley, optional, chopped, for garnish
Directions
Step 1 –Place the onion, pepper, and garlic in a 6-quart slow cooker.
Step 2 –Place the chicken pieces over the vegetables.
Step 3 –Whisk the curry powder, cinnamon, ginger, thyme, brown sugar, and chicken broth together.
