- 2 cloves garlic, minced
- 1 yellow onion, diced
- 2 ribs celery, diced
- 2 carrots, grated
- 1 pound black beans, rinsed
- 1 cup jarred salsa
- 1 tablespoon chili powder
- 1/2 tablespoons ground cumin
- 1 teaspoon dried oregano
- 4 cups vegetable broth
- 2 cups water
- sour cream, optional, to taste, for serving
- scallions, optional, to taste, chopped, for serving
Directions
Step 1 -Combine the garlic, the onion, the celery, the carrots, the black beans, the salsa, the chili powder, the cumin, the oregano, the vegetable broth, and the water in a 5-7 quart slow cooker, stirring well.
