Ingredients

  • 1 tablespoon olive oil
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/3 cup chicken broth
  • 6–8 chicken thighs, bone-in and skins removed
  • 1 tablespoon Italian seasoning
  • 1 teaspoon crushed red chili pepper flakes, optional
  • sea salt, to taste
  • fresh cracked black pepper, to taste
  • 1/2 cup sun-dried tomatoes, chopped
  • 3/4 cup parmesan cheese, grated
  • 2 cups spinach, chopped, packed

Directions

Step 1 –Heat the oil in a medium saucepan over medium heat.

Step 2 –Add the garlic and sauté until fragrant, about 1 minute.

Step 3 –Add the cream and the chicken broth.

Step 4 –Set the heat to low and bring the sauce mixture to a simmer until the sauce thickens, about 10 minutes.

Step 5 –Place the chicken thighs at the bottom of your slow cooker.

Step 6 –Season the chicken thighs with the Italian seasoning, the crushed red chili pepper flakes, the sea salt, and the black pepper.

Step 7 –Top the seasoned chicken thighs with the sun-dried tomatoes.

Step 8 –When the sauce is thickened, lower the heat and whisk in the parmesan cheese, a little at a time, until smooth.
