Soft Ginger Cookies

Ingredients

  • 3/4 cup butter, softened
  • 1 cup sugar, plus more for rolling
  • 1 large egg, at room temperature
  • 1/4 cup molasses
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large bowl, cream the butter and the sugar together until light and fluffy, about 5-7 minutes.

Step 3 –Beat in the egg and the molasses.

Step 4 –Combine the flour, the ginger, the baking soda, the cinnamon, the cloves, and the salt.

Step 5 –Gradually add the flour mixture to the creamed mixture, mixing well.

Step 6 –Roll the dough into 1 1/2-inch balls.

Step 7 –Roll the dough balls in the extra sugar.

Step 8 –Place the dough balls on ungreased baking sheets, about 2-inches apart.

Step 9 –Bake until the cookies are puffy and lightly browned, about 10-12 minutes.

Step 10 –Transfer the cookies to wire racks to cool.

Step 11 –Serve.
