Southern Snowball

The South may not have much experience when it comes to dealing with substantial amounts of snowfall, but they for sure know how to make food taste good… especially pimento cheese! Southern Snowball gives you an excuse to whip up this creamy, cheesy app for all your holiday celebrations. And it’s the best because it’s super low-maintenance when it comes to preparing it. The longest part is just chilling it in the fridge to meld all those yummy flavors together. See? They know what they’re doing! Grab your favorite buttery crackers and enjoy a flurry of Southern Snowball!

Ingredients

  • 1 medium sweet onion, roughly chopped
  • 2 (7-ounce) jars sliced pimientos, drained
  • 2 pounds extra-sharp cheddar cheese, shredded
  • 2 1/2 cups mayonnaise
  • kosher salt, to taste
  • ground black pepper, to taste
  • hot sauce, optional, to taste
  • butter crackers, to taste

Directions

Step 1 –In a food processor, puree the onion and the pimientos until smooth, about 30-45 seconds.

Step 2 –In a bowl, combine the onion mixture, the cheese, and the mayonnaise.

Step 3 –Season the pimiento cheese mixture with the salt and the pepper.

Step 4 –Add the hot sauce to the pimiento cheese mixture.

Step 5 –Cover the pimiento cheese and chill in the fridge for at least 2 hours and up to overnight.

Step 6 –Serve with the crackers.
