- 1/4 cup unsalted butter
- 1 tablespoon bacon drippings, optional
- 1/2 cup yellow onion, chopped
- 1 teaspoon garlic, minced
- 4 cups fresh yellow corn kernels
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon black pepper
Directions
Step 1 -In a medium cast-iron skillet over medium-high heat, add the butter and the bacon drippings and cook until the butter has melted and the mixture is sizzling.
Step 2 -Add the onions to the butter-bacon drippings mixture and cook, stirring frequently, until the onions begin to brown, about 3 minutes.
Step 3 -Add the garlic to the onions and cook, stirring constantly, about 30 seconds.
Step 4 -Add the corn kernels, the salt, and the black pepper to the onion mixture and cook, stirring occasionally, until the corn is tender, about 4 minutes.
