Take a taste-trip to the South! Southern-style Squash Bake will have you quickly yearning for some front porch sittin’. Yellow squash, green bell pepper, and yellow onions give a colorfully delicious presentation when seasoned to perfection along with a touch of vermouth. That’s all topped with panko breadcrumbs and baked golden-brown. Yum! You don’t have to be from the South to enjoy this versatile side dish we call the Southern-style Squash Bake. But it will make you feel good about a scrumptious homestyle dish you’ll want again and again… front porch, optional.

Ingredients

  • 4 pounds yellow squash, chopped
  • 1 1/2 cups yellow onions, finely chopped
  • 4 tablespoons green bell pepper, chopped
  • water, to taste
  • 1/2 pound cheddar cheese, shredded
  • 1/2 pound pepper jack cheese, shredded
  • 8 ounces pimentos, diced
  • 4 large eggs, beaten
  • 2/3 cup mayonnaise
  • 2 tablespoons dry vermouth
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons dried basil
  • 2 teaspoons granulated onion
  • 2 teaspoons granulated garlic
  • hot sauce, to taste
  • 1/4 teaspoon sugar
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 3 cups panko breadcrumbs

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat two 9×13-inch baking dishes with nonstick cooking spray.

Step 3 –In a large pot over medium heat, add the squash, the onions, the bell pepper, and enough of the water to just cover the vegetables and bring to a boil. Cook until the squash is just soft, about 10 minutes.

Step 4 –Drain the vegetable mixture in a colander and return the veggies to the same pot.

Step 5 –Add the cheddar cheese, the pepper jack cheese, the pimentos, the eggs, the mayonnaise, the dry vermouth, Worcestershire sauce, the basil, the granulated onion, the granulated garlic, the hot sauce, the sugar, the salt, and the black pepper to the vegetable mixture and stir to combine.

Step 6 –Spoon the vegetable mixture into the prepared baking dishes and evenly sprinkle with the panko breadcrumbs.

Step 7 –Bake the squash bake until golden-brown, about 30-45 minutes.

Step 8 –Serve.
