Ingredients

For the salad:

  • 1 cup couscous
  • 1 avocado, halved, seeded, peeled, and diced
  • 1/2 cup corn kernels
  • 1/2 cup strawberries, quartered
  • 2 tablespoons fresh cilantro leaves, chopped
  • 2 tablespoons pine nuts

For the lime vinaigrette:

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • zest of 1 lime
  • 2 tablespoons lime juice, freshly squeezed
  • 2 teaspoons sugar

Directions

Step 1 –In a medium saucepan, cook the couscous according to the package instructions.

Step 2 –In a large bowl, combine the cooked couscous, the avocado, the corn, the strawberries, the cilantro, and the pine nuts. Stir in the lime vinaigrette.

Step 3 –Whisk the olive oil, the apple cider vinegar, the lime zest, the lime juice, and the sugar in a small bowl together.
