Springtime Tilapia

The birds are chirping, the flowers are blooming, and the aromas of Springtime Tilapia are in the air! The flaky, heart-healthy fish is coated with savory bread crumbs, earthy olive oil, pickle-y dill, and tangy lemon juice–can’t you just smell it?! Springtime Tilapia is ready in under 20 minutes, so you can quickly dig in and enjoy every moment of the season with a satisfied belly!

Ingredients

  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill, snipped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 (6-ounce) tilapia fillets
  • 1 tablespoon lemon juice
  • lemon wedges, optional, to taste, for serving

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Use cooking spray to coat a 15x10x1-inch baking pan.

Step 3 –In a medium bowl, toss together the breadcrumbs, the olive oil, the dill, the salt, and the pepper.

Step 4 –Place the fillets on the prepared pan and brush with the lemon juice.

Step 5 –Evenly top the tilapia filets with the breadcrumb mixture, patting to help it adhere to the fish.

Step 6 –Bake, uncovered, on the upper oven rack until the fillets just begin to flake easily with a fork, about 12-15 minutes, and reach an internal temperature of 145 degrees F.

Step 7 –Serve with the lemon wedges.
