Strawberry Lemon Blondies

There’s still time for one more truly refreshing, summery dessert before autumn starts in earnest! And what better way to encapsulate summer than with Strawberry Lemon Blondies? It’s like the coolest beverage of the season baked into a fudgy cake form! The bright lemon and strawberry flavors are baked into the tender, sweet blondie, and then it all gets topped with a creamy glaze with even more of that deliciously fresh fruit flavor! Take a bite of Strawberry Lemon Blondies and let your taste buds enjoy a little bit more summer fun!

Ingredients

For the blondies:

  • 2 1/4 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, room temperature
  • 3/4 cup sugar
  • 1 large egg, room temperature
  • 1/4 cup lemon juice
  • 1 cup fresh strawberries, diced
  • 1/2 cup white or dark chocolate chips

For the strawberry lemon glaze:

  • 2-3 strawberries, plus more, to taste
  • 1 tablespoon lemon juice, plus more, to taste
  • 1 cup powdered sugar, measured then sifted, plus more, to taste

For the white chocolate drizzle:

  • 1/4 cup white chocolate chips or candy melts, melted

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a 7×11-inch pan with parchment paper.

Step 3 –In a bowl, whisk together the flour, the baking powder, and the salt until combined.

Step 4 –In the bowl of a standing mixer or using a hand mixer, cream the butter and the sugar together on medium speed until light and fluffy, about 2-3 minutes. Make sure to scrape down the sides of the bowl with a spatula.

Step 5 –Add the egg to the butter mixture and mix until incorporated.

Step 6 –Add 1/4 cup of the lemon juice to the butter mixture, while scraping down the sides of the bowl, and mix to combine.

Step 7 –Add the dry ingredients mixture to the wet ingredients mixture and mix until just combined.

Step 8 –Gently fold in 1 cup of the diced strawberries and 1/2 cup of the chocolate chips.

Step 9 –Pour the mixture into the prepared pan, spreading it out evenly.

Step 10 –Bake until a toothpick inserted into the center comes out clean and the edges are brown, about 35-40 minutes.

Step 11 –Let the blondies cool completely.

Step 12 –PurĂ©e 2 or 3 of the whole strawberries.

Step 13 –Over a small bowl, strain out the solid parts of the purĂ©ed strawberries so just the liquid is left.

Step 14 –In another bowl, mix the strawberry liquid, 1 tablespoon of the lemon juice, and 1 cup of the powdered sugar and mix thoroughly until a glaze forms. Add more of the extra lemon juice or more of the extra strawberry juice as needed to thin the mixture. To thicken the mixture, add more of the extra powdered sugar.

Step 15 –Pour the glaze over the cooled blondies and quickly spread it out evenly.

Step 16 –Let the glaze set.

Step 17 –In a microwave-safe bowl, microwave the remaining chocolate chips for 10-15 seconds at a time, stirring in between each interval until they are melted.

Step 18 –Pour the melted chocolate into a pastry bag or a resealable plastic bag with the tip cut off.

Step 19 –Drizzle the chocolate over the blondies.

Step 20 –Serve.
