Ingredients

  • 4 chicken breasts
  • salt, to taste
  • 1 tablespoon cumin
  • 8 ounces corn, drained
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 4 ounces cotija or feta cheese, crumbled
  • 3 green onions, optional, chopped

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Add the chicken breasts to a medium casserole dish.

Step 3 –Top with the salt and cumin.

Step 4 –Add the corn, black beans, and chili powder.

Step 5 –Crumble the cheese and sprinkle it over the contents of the casserole dish.

Step 6 –Place the casserole dish in the oven and bake until the chicken is cooked through, reaching 165 degrees F in its thickest part, about 20-25 minutes.

Step 7 –Serve warm, topped with the green onions.
