Summer’s Mexican Fruit Salad

Is it even summer if you haven’t taken a bite out of a juicy watermelon yet?! We don’t think so! Let’s make that happen, but with a delightfully spicy twist, thanks to this Summer’s Mexican Fruit Salad! The sweet flavor from your favorite warm weather fruit gets sprinkled with a TajĂ­n® kick and a creamy cotija cheese blast to create a tastebud sensation you didn’t know you were missing… a very, very refreshing one! It’s the perfect bite when you’re snackin’ by the pool or better yet, the most delicious and fun side for all the cookouts you’ll be headed to this year! Garnished with a little bit of fresh cilantro and bursting jalapeños, Summer’s Mexican Fruit Salad will make you feel like you’re living in a summer fantasy with just one bite!

Ingredients

  • 1/2 small seedless watermelon
  • 1 tablespoon olive oil
  • 2 teaspoons lime juice, freshly squeezed
  • 1 tablespoon TajĂ­n Clásico chile lime seasoning
  • 2 ounces cotija cheese, finely crumbled
  • 2 teaspoons cilantro, finely chopped
  • 1/4 jalapeño, optional, finely sliced, for serving
  • 1/2 lime, cut into wedges, for serving

Directions

Step 1 –Place the watermelon cut-side down on a cutting board.

Step 2 –Cut the watermelon into 1-inch-thick pieces, then slice each piece into triangles.

Step 3 –Arrange the slices on a large plate or tray.

Step 4 –Drizzle the slices with the olive oil and the lime juice.

Step 5 –Sprinkle the slices with the TajĂ­n seasoning, the cotija cheese, the cilantro, and the jalapeños.

Step 6 –Serve the fruit salad with the lime wedges.
