Superhero Breakfast Bars

Da-da-da-daa, it’s Superhero Breakfast Bars! These slightly sweet yet healthy squares will make sure your tummy is settled, no matter what kind of mayhem your morning may bring. Just whip them up the night before and you’ll be rescued from the chaos of trying to figure out what to eat for breakfast. It’s always the unlikely that swoop in and save the day! Ingredients

For the bars:

  • 2 1/3 cups rolled oats
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 tablespoons ground flaxseed meal
  • 1 teaspoon ground cinnamon
  • 3 ripe bananas
  • 1 tablespoon pure vanilla extract
  • 1/2 cup pure pumpkin
  • 1/4 cup maple syrup
  • 2 tablespoons creamy peanut butter
  • 1/3 cup chocolate chips, plus more, to taste

For serving:

  • sliced almonds, to taste
  • bananas, to taste, sliced
  • cinnamon, to taste

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line an 11×7-inch baking dish with parchment paper, then coat it with nonstick cooking spray.

Step 3 -In a food processor, add the rolled oats and pulse until they are ground.

Step 4 -In a medium bowl, add the ground oats, the baking powder, the baking soda, the salt, the flaxseed meal, and 1 teaspoon of the cinnamon and mix to combine.

Step 5 -In a large mixing bowl, add 3 of the bananas and mash them with a fork.

Step 6 -Add the vanilla, the pumpkin, the maple syrup, and the peanut butter to the mashed bananas and stir until it is combined and somewhat smooth.

Step 7 -Add the oat mixture to the banana mixture and mix until they are combined.

Step 8 -Fold 1/3 cup of the chocolate chips into the bar mixture.

Step 9 -Spread the bar mixture into the prepared pan so that it is smooth, then sprinkle it with the extra chocolate chips.

Step 10 -Bake the bars until a tester inserted in the center comes out clean, about 30 minutes.

Step 11 -Transfer the baking dish to a wire rack and let the bars cool.

Step 12 -Cut the cooled bars into squares.

Step 13 -Serve the bars topped with the almonds, the remaining banana slices, and the remaining cinnamon.
