Sweet Orange Chicken Thighs

Ingredients

  • 1 cup orange juice
  • 1/3 cup sugar
  • 1/3 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • olive oil, to taste, for oiling the grill grates
  • 1 tablespoon Dijon mustard
  • 2 teaspoons orange zest
  • 6 chicken thighs, boneless and skinless
  • 1/2 teaspoon lemon-pepper seasoning

Directions

Step 1 –In a small saucepan, combine the orange juice, the sugar, the brown sugar, and the salt.

Step 2 –Bring the juice mixture to a boil and cook, while stirring, until the sugar dissolves.

Step 3 –Cook, uncovered, until the juice mixture reaches a glaze-like consistency, about 10-15 minutes.

Step 4 –Preheat the grill to medium heat.

Step 5 –Using the olive oil, lightly oil the grill grates.

Step 6 –Transfer the glaze from the heat.

Step 7 –Stir the Dijon mustard and the orange zest into the glaze mixture.

Step 8 –Sprinkle the chicken thighs with the lemon-pepper seasoning.

Step 9 –Add the chicken thighs to the grill, cover, and cook, flipping the chicken halfway through, until the thighs reach an internal temperature of 165 degrees F, about 6-8 minutes per side. During the last 5 minutes of cooking, occasionally brush the chicken thighs with the glaze.

Step 10 –Serve the chicken thighs with the remaining sauce.
