Ingredients

  • 2 tablespoons olive oil
  • 2 medium sweet potatoes, washed, peeled, and chopped into 1-inch cubes
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 small yellow onion, thinly sliced
  • 1-2 cups carnitas
  • 1/2 teaspoon kosher salt
  • 2 eggs, fried
  • 1 avocado, optional, thinly sliced
  • cilantro, optional, for serving

Directions

Step 1 –Heat the olive oil in a 10-inch skillet over medium-high heat.

Step 2 –Fry the potatoes until lightly brown, stirring occasionally, for about 15 minutes.

Step 3 –Add the red bell pepper, green bell pepper, and onion and cook until all the vegetables are tender, for about 10 minutes.

Step 4 –Add the carnitas and cook until warmed through.

Step 5 –Season with salt.

Step 6 –Top with the fried eggs, avocado, and cilantro.

Step 7 –Serve.
