Ham Hash is just a nice breakfast, plain and simple. Caramel-y sweet potatoes and savory Brussels sprouts with succulent ham, all baked together in garlic and oil for an extra infusion of flavor. And then it’s topped off with a fried egg… yay! Ham Hash makes your day better from its first moments!
Ingredients
- 2 medium sweet potatoes, peeled and shredded
- 1 pound Brussels sprouts, trimmed and thinly sliced
- 2 cups ham, chopped
- 3 cloves garlic, minced
- 4 tablespoons avocado oil
- 1 teaspoon sea salt
- 6 eggs, optional, to taste, fried and warm, for serving
Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –On a large, rimmed sheet pan, add the sweet potatoes, the Brussels sprouts, the ham, and the garlic.
Step 3 –Drizzle the ham mixture with the avocado oil and sprinkle it with the salt.
Step 4 –Using your clean hands or tongs, toss the ham mixture until everything is evenly coated.
Step 5 –Divide the ham mixture between two sheet pans.
Step 6 –Roast, rotating the pans halfway through and tossing the hash occasionally, until the vegetables are crispy and caramelized in places, about 20-25 minutes.
Step 7 –Serve the hash with the fried eggs.
