Ingredients

  • 1 1/2 pound center-cut salmon filet, skin-on
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin, divided
  • 3/4 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground oregano, divided
  • 1/2 small red onion, finely chopped
  • 1/3 cup nonfat plain Greek yogurt
  • zest of 2 medium lemons, about 2 teaspoons
  • 3 tablespoons fresh lemon juice
  • 1 clove of garlic, minced or grated
  • 2 mini cucumbers or 1/2 English cucumber, diced into 1/2-inch pieces
  • 1/2 cup feta, crumbled

  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh cilantro, chopped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a baking dish large enough to hold the salmon filet with a sheet of parchment paper.

Step 3 –Place the salmon in the prepared pan, patting it dry with paper towels.

Step 6 –Bake the salmon until it reaches 145 degrees F internally, it flakes easily with a fork, and it no longer looks raw in the center, about 14-18 minutes.

Step 7 –Let the salmon cool to room temperature.

Step 8 –While the salmon is roasting, place the red onion in a bowl.

Step 9 –Cover the red onion with cold water and set it aside to soak. This removes some of the onions’ harshness without compromising the flavor.

Step 10 –In a small mixing bowl, stir together the yogurt, lemon zest, lemon juice, garlic, the remaining cumin, the remaining salt, and the remaining oregano.

Step 11 –Discard the salmon skin.

Step 12 –Flake the salmon into chunky pieces in a large serving bowl.

Step 13 –In the same serving bowl, add the cucumber, feta, almonds, currants, dill, and cilantro.

Step 14 –Drain the red onion and add it to the bowl.

Step 15 –Pour the dressing over the top of the salad.

Step 16 –Gently stir to combine.

Step 17 –Taste for seasoning and serve chilled.
